🧾 Ingredients (3–4 servings)
- 12 oz pasta (penne or rigatoni)
- 12 oz smoked sausage, sliced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated parmesan
- Salt & black pepper
🔥 Detailed Cooking Instructions
- Boil pasta in well-salted water until al dente. Reserve 1/2 cup pasta water, then drain.
- Heat olive oil in a pan over medium-high heat.
- Add sausage slices, sear 2–3 minutes per side until browned. Remove.
- Lower heat to medium, add butter and onion. Cook 3–4 minutes until soft.
- Add garlic and Cajun seasoning. Stir 30 seconds until fragrant.
- Pour in cream and chicken broth. Simmer 3–4 minutes until slightly thick.
- Add parmesan, stir until smooth.
- Return sausage and pasta to pan. Toss well.
- Add pasta water if needed for a silky sauce.
- Taste and adjust salt or spice.
