Cauliflower Fried Rice Recipes: A 30-Minute Weeknight Skillet

Cauliflower fried rice with scrambled egg, carrots, bell pepper, and scallions in a black cast-iron skillet.

Takeout fried rice has a very specific magic: the savory sauce, the soft eggs, the little pops of sweet vegetable, all clinging to something you can eat with a spoon. This cauliflower fried rice keeps that magic and swaps the rice for a whole head of cauliflower riced in the food processor. It comes together in one skillet in about half an hour, and it is the kind of weeknight dinner you can make again and again without thinking too hard.

Why cauliflower fried rice works on a weeknight

Cauliflower riced in a food processor has the same grain-like texture as rice, and that is the whole trick. Those little crumbs soak up soy sauce, sesame oil, and the garlic-ginger base the way rice would, so the finished dish tastes like fried rice instead of a vegetable pretending to be one. One head of cauliflower gives you about six cups of rice, which is exactly what a 12-inch skillet can handle, and the cooking itself takes about fifteen minutes. The eggs and the vegetables cook in the same pan, with the eggs taking one quick trip to a plate so they stay soft. The sauce comes from pantry staples, and the vegetables are the ones most of us already keep in the crisper drawer.

Cauliflower fried rice ingredients and easy swaps

Start with a large head of cauliflower, about two pounds, which rices down to roughly six cups. If you would rather skip the food processor, grate the florets on the large holes of a box grater, or buy a bag of fresh riced cauliflower and use the same six cups. Frozen riced cauliflower works too; thaw it and squeeze out the extra water first. Three eggs get scrambled into soft, small curds. The vegetables are a cup of finely diced carrot, one diced red bell pepper, and four scallions, with the white parts going into the pan early and the green parts scattered over the top at the end. Three cloves of garlic and about an inch of fresh ginger do the heavy lifting on flavor. The sauce is just low-sodium soy sauce and toasted sesame oil, and if you keep gluten-free, tamari swaps in one for one. There is no rice here and no bottled stir-fry sauce, so nothing to hunt down at a specialty store.

Tips for better cauliflower fried rice

The most important thing is moisture. Cauliflower holds a lot of water, and if it goes into the pan wet, it steams and turns soft instead of picking up any browning. If you rice it ahead of time, spread it on a clean kitchen towel and pat it dry, and give thawed frozen cauliflower the same treatment. Second, cook in stages: scramble the eggs first and move them to a plate, then cook the vegetables, then the cauliflower, and stir the eggs back in at the very end so they stay tender. Third, use a wide skillet. A 12-inch nonstick pan gives six cups of cauliflower room to cook rather than crowd, and a crowded pan is what makes the whole thing soggy. Finally, taste before you serve. Soy sauce brands vary in saltiness, so add a splash more at the end if the dish tastes flat. Everything moves quickly once the pan is hot, so chop and measure before you turn on the burner.

Storing and serving cauliflower fried rice

Leftovers keep well in an airtight container in the refrigerator for three to four days, and they reheat gently in a skillet over medium-low heat or in the microwave with a small splash of water. The cauliflower softens a little by the second day, so day-one is when the texture shines, though the flavor holds up fine. The dish also freezes for up to two months. For serving, divide it among four bowls as a main dish, or set it next to grilled chicken, salmon, or crispy tofu and call it a side. A fried egg on top, a scatter of the reserved scallion greens, a spoonful of chili crisp, or a squeeze of lime all make good finishes. It is a lighter plate than the takeout carton, but it is comfort food first.

Ingredients

  • 1 large head cauliflower about 2 lb; cut into florets and riced (about 6 cups)
  • 3 large eggs beaten with a pinch of salt
  • 2 tbsp olive oil or avocado oil divided
  • 1 cup carrots finely diced (about 2 medium)
  • 1 medium red bell pepper seeded and diced (about 1 cup)
  • 4 scallions thinly sliced, whites and greens kept separate
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger peeled and grated (about 1-inch piece)
  • 3 tbsp soy sauce low-sodium; use tamari for gluten-free, plus more to taste
  • 2 tsp toasted sesame oil
  • 1/2 tsp kosher salt plus more to taste

Method

  1. Rice the cauliflower: cut the head into florets and pulse in a food processor in 2 batches until the pieces are the size of rice grains, about 10 pulses per batch (or grate the florets on the large holes of a box grater). You should have about 6 cups; set aside.
  2. Heat 1 tbsp of the oil in a 12-inch nonstick skillet over medium heat. Add the eggs and scramble until just set, about 1 minute, breaking them into small pieces. Transfer to a plate.
  3. Add the remaining 1 tbsp oil and raise the heat to medium-high. Add the carrots and bell pepper and cook, stirring, for 3 minutes. Stir in the scallion whites, garlic, and ginger and cook for 30 seconds, until fragrant.
  4. Add the riced cauliflower and the 1/2 tsp salt. Cook for 8-10 minutes, stirring often and spreading the mixture out in the pan, until the cauliflower is tender and its moisture has cooked off.
  5. Stir in the soy sauce and sesame oil and cook for 1-2 minutes more. Return the eggs, add the scallion greens, and toss to combine. Taste and add more soy sauce if needed.
  6. Divide among 4 bowls and serve hot.

Cauliflower fried rice is the kind of recipe that earns a permanent spot in the weeknight rotation: fast enough for a Tuesday, satisfying enough that nobody at the table misses the rice. Pick up a head of cauliflower, give it a try this week, and adjust the vegetables and the sauce until it tastes like yours.
