Ingredients

  • 16 Medjool dates pitted, large
  • 8 slices bacon halved crosswise
  • 4 oz goat cheese softened
  • 1 tbsp honey plus extra for drizzling
  • 1 tsp fresh thyme leaves chopped
  • 1/4 tsp black pepper

Method

  1. Preheat the oven to 400 °F and line a rimmed baking sheet with parchment paper.
  2. In a small bowl, mash the goat cheese with the thyme and black pepper until smooth.
  3. Slice each date open lengthwise, remove the pit, fill with about 1 teaspoon of the goat cheese mixture, and pinch closed.
  4. Wrap each filled date with half a slice of bacon and secure with a toothpick; set them seam-side down on the baking sheet.
  5. Bake for 20-24 minutes, turning once at the 15-minute mark, until the bacon is crisp and browned.
  6. Drizzle the warm bites with honey and rest 5 minutes before serving warm.
