Ingredients

  • 10 oz frozen chopped spinach thawed and squeezed very dry
  • 14 oz artichoke hearts canned or jarred, drained and chopped
  • 1 cup plain Greek yogurt whole-milk or 2%
  • 4 oz cream cheese softened; reduced-fat works
  • 3/4 cup shredded mozzarella divided
  • 1/4 cup grated Parmesan
  • 2 cloves garlic minced
  • 1 tbsp lemon juice fresh
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method

  1. Heat oven to 375°F. Wrap the thawed spinach in a clean kitchen towel and squeeze until very dry, then roughly chop. Drain the artichoke hearts and chop into bite-size pieces.
  2. In a large bowl, stir the Greek yogurt, softened cream cheese, garlic, lemon juice, salt, and pepper until smooth.
  3. Fold in the spinach, artichokes, 1/2 cup of the mozzarella, and the Parmesan until evenly combined.
  4. Spread the mixture into a 1-quart baking dish and sprinkle the remaining 1/4 cup mozzarella over the top.
  5. Bake 22-25 minutes, until bubbly and golden at the edges. For a browner top, broil 1-2 minutes, watching closely.
  6. Let stand 5 minutes, then serve warm with vegetables, pita chips, or toasted baguette slices.
