Total Time 20 minutes
Servings: 20 skewers
Course: Appetizer
Cuisine: Italian-American

Ingredients

  • 1 pint cherry tomatoes about 20
  • 8 oz fresh mozzarella bocconcini drained; halve any larger than a cherry tomato
  • 20 fresh basil leaves large leaves torn in half
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Method

  1. Whisk the balsamic vinegar and honey in a small saucepan over medium heat. Bring to a gentle simmer and cook 4-5 minutes, stirring often, until the glaze coats the back of a spoon. Remove from heat and cool 5 minutes.
  2. Thread one cherry tomato, one basil leaf and one mozzarella ball onto each 6-inch wooden skewer, tucking the basil between the tomato and cheese so it stays in place. Repeat to fill 20 skewers.
  3. Arrange the skewers on a serving platter, drizzle with the olive oil and season with the salt and pepper.
  4. Drizzle the cooled balsamic glaze over the skewers just before serving, or serve it on the side for dipping.
