Ingredients

  • 1 cup graham cracker crumbs about 8 full sheets, finely crushed
  • 3 tbsp unsalted butter melted
  • 1 pinch salt
  • 8 oz light cream cheese softened, 1 package
  • 1/2 cup plain nonfat Greek yogurt
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 1 1/2 cups fresh strawberries hulled and finely diced

Method

  1. Line a 24-cup mini muffin pan with paper liners.
  2. Stir the graham crumbs, melted butter and salt until the mixture looks like wet sand. Press about 2 tsp into the bottom of each cup and freeze 10 minutes.
  3. Beat the cream cheese with an electric mixer for 1 minute until smooth. Add the Greek yogurt, honey, vanilla and lemon juice and beat 2 minutes more until light and fluffy.
  4. Divide the filling among the cups, about 1 tbsp each, and smooth the tops with the back of a spoon.
  5. Freeze 2 hours until firm, or refrigerate 4 hours for a softer set.
  6. Lift the bites out of the liners, top with diced strawberries and serve cold. Store frozen up to 1 month and thaw 10 minutes before serving.
