Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter softened, 1 1/2 sticks
  • 1/2 cup light brown sugar packed
  • 1/3 cup unsulphured molasses not blackstrap
  • 1 large egg
  • 1/4 cup granulated sugar for rolling

Method

  1. Heat the oven to 350 °F and line two baking sheets with parchment paper.
  2. Whisk the flour, ginger, cinnamon, cloves, baking soda and salt in a medium bowl.
  3. Beat the softened butter and brown sugar in a large bowl for 2 minutes until creamy, then beat in the molasses and egg until smooth.
  4. Add the dry mix in two additions and stir just until a soft dough forms. Cover and chill 30 minutes so the dough firms up.
  5. Roll the dough into 1 1/2-inch balls, roll each ball in the granulated sugar, and place 2 inches apart on the sheets.
  6. Bake 10-12 minutes, until the edges are set and the centers still look soft. Cool on the sheet 5 minutes, then transfer to a wire rack.
