Ingredients

  • 1 head cauliflower large (about 2 lb), cut into bite-size florets
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp fine salt plus more to taste
  • 8 6-inch corn tortillas warmed (flour tortillas work too)
  • 1 large ripe avocado pitted
  • 1/2 cup plain Greek yogurt whole-milk or 2%
  • 1 lime juiced (about 2 tbsp), plus wedges for serving
  • 1-2 tbsp water as needed, if the crema is too thick
  • 1/4 cup fresh cilantro chopped

Method

  1. Heat oven to 425°F. On a large rimmed baking sheet, toss cauliflower with olive oil, chili powder, cumin, smoked paprika, garlic powder and salt until evenly coated, then spread in a single layer.
  2. Roast 22-25 minutes, tossing halfway through, until florets are tender with browned edges.
  3. Meanwhile, blend or mash the avocado, Greek yogurt and lime juice with a pinch of salt until smooth and pourable, adding a splash of water if needed, to make the crema.
  4. Warm the tortillas in a dry skillet over medium heat, about 20 seconds per side.
  5. Fill each tortilla with roasted cauliflower, drizzle with avocado crema and finish with cilantro; serve with lime wedges.
