Deviled Eggs with Avocado: 40-Minute New Year's Eve Bites

Creamy avocado and lime replace the mayo in these deviled eggs, a lighter take on the classic New Year's Eve appetizer. A foolproof boil-and-ice-bath method gets them platter-ready in about 40 minutes.

Ingredients

  • 12 large eggs
  • 2 medium ripe avocados peeled and pitted
  • 2 tbsp lime juice from about 1 lime
  • 1 tbsp Dijon mustard
  • 1/4 tsp smoked paprika plus more for garnish
  • 2 tbsp fresh cilantro finely chopped (or chives)
  • salt and black pepper to taste
  • water and ice for boiling and the ice bath

Method

  1. Place the eggs in a single layer in a large saucepan and cover with cold water by 1 inch. Bring to a rolling boil over high heat, about 8 minutes.
  2. Remove the pan from the heat, cover, and let the eggs stand for 12 minutes; meanwhile, fill a large bowl with ice water.
  3. Transfer the eggs to the ice bath for 5 minutes, then peel (peel under cold running water if the shells stick).
  4. Halve the eggs lengthwise, scoop the yolks into a medium bowl, and set the whites cut-side up on a platter.
  5. Mash the yolks with the avocado, lime juice, Dijon, smoked paprika, salt, and pepper until completely smooth; taste and add more lime or salt if needed.
  6. Spoon or pipe the filling into the whites and garnish with cilantro and a pinch of paprika.
  7. Serve right away, or chill for up to 4 hours; these are best the day they are made, since the avocado filling darkens over time.
