Easy Apple Cinnamon Baked Oatmeal for Fall Mornings

This cozy apple cinnamon baked oatmeal comes together in one bowl with oats, fresh apples and warm spice. Bake it once and you have six grab-and-go breakfasts ready for the week.

Ingredients
  

  • 2 cups old-fashioned rolled oats not instant
  • 1 1/2 cups milk dairy or unsweetened almond milk
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 1/4 cup plain Greek yogurt or unsweetened applesauce
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups apples diced, about 2 medium, peeled or unpeeled
  • 1/3 cup walnuts chopped; pecans work too
  • 1/2 teaspoon vanilla extract optional

Method
 

  1. Preheat the oven to 350°F and grease an 8x8-inch baking dish.
  2. In a large bowl, whisk the milk, eggs, maple syrup, yogurt, vanilla, cinnamon, baking powder and salt until smooth.
  3. Stir in the oats, then fold in 1 1/2 cups of the diced apples.
  4. Pour the mixture into the baking dish and scatter the remaining apples and the walnuts over the top.
  5. Bake 35-40 minutes, until the center is set and the edges are golden and a toothpick comes out mostly clean.
  6. Cool 10 minutes, cut into 6 squares and serve warm. Refrigerate leftovers up to 4 days; reheat in the microwave.
