Ingredients

  • 3 ripe avocados medium, halved and pitted
  • 2 tbsp fresh lime juice from about 1 lime
  • 1/4 cup red onion finely diced
  • 1 jalapeno seeded and minced, about 1 tbsp
  • 1/4 cup fresh cilantro chopped
  • 1/2 tsp kosher salt plus more to taste
  • 1/2 cup pomegranate arils from about half a small pomegranate

Method

  1. Halve the avocados, discard the pits, and scoop the flesh into a medium bowl.
  2. Add the lime juice and kosher salt, then mash with a fork until creamy but still chunky, about 20 strokes.
  3. Fold in the red onion, jalapeno, and cilantro until evenly combined. Taste and add more salt if needed.
  4. Spoon the guacamole into a serving bowl and scatter the pomegranate arils over the top.
  5. Serve right away with tortilla chips and veggie sticks, or press plastic wrap directly onto the surface and refrigerate for up to 2 hours.
