Ingredients

  • 4 firm-ripe pears Bosc or Anjou, halved lengthwise and cored
  • 2 tbsp honey plus extra for serving
  • 1 tbsp unsalted butter melted
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine salt
  • 1/2 cup walnuts roughly chopped
  • 1 cup plain Greek yogurt
  • 1/2 tsp vanilla extract

Method

  1. Heat the oven to 400°F. Arrange the pear halves cut-side up in a 9x13-inch baking dish.
  2. In a small bowl, stir the honey, melted butter, cinnamon and salt; brush half of it over the pears.
  3. Roast 20-25 minutes, until a knife slides easily into the thickest part, basting once with the pan juices halfway through.
  4. Meanwhile, toast the walnuts in a dry skillet over medium heat 3-4 minutes, stirring, until fragrant. Stir the vanilla into the yogurt.
  5. Serve the warm pears with the yogurt, toasted walnuts and a drizzle of the remaining honey mixture.
