Ingredients

  • 4 fillets salmon 6 oz each, skin on, about 1 inch thick
  • 3 tbsp Dijon mustard smooth or whole-grain
  • 2 tbsp maple syrup pure
  • 1 tbsp lemon juice fresh
  • 1 tbsp olive oil extra-virgin
  • 1 lb broccoli cut into 1-inch florets
  • 2 cloves garlic minced
  • 1/2 tsp salt divided
  • 1/4 tsp black pepper

Method

  1. Heat oven to 425°F and line a rimmed sheet pan with parchment.
  2. Whisk the Dijon, maple syrup, lemon juice, garlic, 1/4 tsp salt and pepper in a small bowl.
  3. Toss broccoli with olive oil and the remaining 1/4 tsp salt, spread in an even layer and roast 8 minutes.
  4. Pat salmon dry, nestle among the broccoli, and spoon half the glaze over the fillets; keep the rest untouched for serving.
  5. Roast 12-14 minutes, until the salmon reaches 145°F and flakes easily.
  6. Drizzle the reserved glaze over the salmon and serve.
