No-Bake Pumpkin Energy Bites with Oats and Chia Seeds

These no-bake pumpkin energy bites come together in about 15 minutes with real pumpkin, peanut butter, and oats, then firm up in the fridge. They are an easy make-ahead fall snack for lunchboxes, hikes, or the afternoon slump, and they keep all week.

Ingredients
  

  • 1 1/2 cups old-fashioned rolled oats not quick oats
  • 1/2 cup pumpkin puree not pumpkin pie filling
  • 1/2 cup creamy peanut butter or almond butter
  • 3 tbsp pure maple syrup
  • 2 tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/3 cup mini chocolate chips optional
  • 1/4 tsp fine salt

Method
 

  1. In a large bowl, stir together the pumpkin puree, peanut butter, maple syrup, vanilla, and salt until smooth.
  2. Add the oats, chia seeds, pumpkin pie spice, and chocolate chips and mix until no dry oats remain. The mixture should be thick and slightly sticky; if it is too wet, stir in 1 to 2 tbsp more oats.
  3. Cover and refrigerate for 30 minutes so the oats and chia absorb moisture and the mixture firms up.
  4. Roll the chilled mixture into 16 balls, about 1 heaping tbsp each, and place them in an airtight container.
  5. Store in the refrigerator for up to 1 week or freeze for up to 3 months; let frozen bites thaw for 10 minutes before eating.
