One-Pan Lemon Garlic Salmon with Crispy Broccoli

Flaky salmon fillets and tender broccoli roast together on one sheet pan under a sweet-tangy lemon garlic glaze. It is an easy, healthy dinner that is ready in about 30 minutes with one pan to wash.

Ingredients
  

  • 4 salmon fillets 6 oz each, about 1 inch thick
  • 1 lb broccoli about 1 large head, cut into florets
  • 2 tbsp olive oil divided
  • 2 tbsp honey
  • 2 tbsp soy sauce low-sodium
  • 3 cloves garlic minced
  • 1 lemon zested and juiced, plus wedges for serving
  • 1/2 tsp salt divided
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional

Method
 

  1. Heat oven to 425°F and line a large rimmed baking sheet with parchment paper. Toss the broccoli with 1 tbsp olive oil, 1/4 tsp salt and a pinch of black pepper, spread it in a single layer, and roast for 8 minutes.
  2. Meanwhile, whisk the honey, soy sauce, remaining 1 tbsp olive oil, garlic, lemon zest, lemon juice and red pepper flakes together in a small bowl.
  3. Pull the sheet from the oven and push the broccoli to the edges. Pat the salmon dry, set the fillets in the center, and season with the remaining 1/4 tsp salt.
  4. Brush the salmon generously with the glaze. Roast for 10-12 minutes, until the salmon flakes easily with a fork and reaches 145°F and the broccoli edges are crisp.
  5. Spoon the warm pan glaze over the salmon, add lemon wedges, and serve.
