One-Pot Creamy Mushroom Pasta with Spinach and Parmesan

A cozy one-pot dinner where penne simmers right in the broth, then gets tossed with golden mushrooms, garlic, spinach and a light Parmesan cream. Ready in about 30 minutes with just one pot to wash.

Ingredients
  

  • 2 tbsp olive oil
  • 16 oz cremini mushrooms sliced (about 5 cups)
  • 1 cup yellow onion diced (about 1 small onion)
  • 3 cloves garlic minced
  • 12 oz penne or rotini dry
  • 3 1/4 cups low-sodium vegetable broth
  • 1 cup 2% milk
  • 1/2 cup Parmesan cheese finely grated
  • 5 oz baby spinach about 5 packed cups
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper

Method
 

  1. Heat the olive oil in a large Dutch oven or deep 12-inch skillet over medium-high. Add the mushrooms and 1/2 tsp salt; cook 8-10 minutes, stirring only every couple of minutes, until golden and their liquid has cooked off.
  2. Add the onion and cook 3 minutes until softened. Stir in the garlic and cook 30 seconds until fragrant.
  3. Pour in the broth and scrape up any browned bits. Stir in the pasta, bring to a boil, then reduce to a steady simmer and cook uncovered 10-12 minutes, stirring every 2 minutes, until the pasta is al dente and most of the broth is absorbed.
  4. Reduce the heat to low. Stir in the milk and Parmesan and cook 1-2 minutes until the sauce turns creamy; do not let it boil hard.
  5. Add the spinach and stir for 1 minute until wilted. Turn off the heat, stir in the black pepper, taste for salt, and let the pasta rest 3-4 minutes to thicken. Serve with extra Parmesan.
