Peppermint Fudge Recipe: 15-Minute Prep, 2-Hour Chill

Five ingredients and one saucepan turn into glossy chocolate fudge with a cool peppermint snap and a crunchy candy-cane top. No oven and no candy thermometer: about 20 minutes of hands-on work, then two hours in the fridge.

Ingredients

  • 3 cups semisweet chocolate chips about 18 oz
  • 1 can (14 oz) sweetened condensed milk full-fat
  • 2 tablespoons unsalted butter cut into small pieces
  • 1 teaspoon peppermint extract pure extract, not peppermint oil
  • 1/2 cup crushed candy canes about 4 oz, 5 to 6 canes

Method

  1. Line an 8-inch square baking pan with parchment paper, leaving a 2-inch overhang on two sides. Crush the candy canes in a zip-top bag with a rolling pin until mostly fine, with a few chunky pieces left for texture.
  2. Combine the chocolate chips, sweetened condensed milk, and butter in a medium saucepan over low heat. Stir constantly with a rubber spatula until melted, smooth, and glossy, 4 to 5 minutes; do not let it bubble.
  3. Take the saucepan off the heat and stir in the peppermint extract until evenly combined.
  4. Pour the fudge into the lined pan and spread it level. Scatter the crushed candy canes over the top and press them in gently.
  5. Refrigerate uncovered for 2 hours, until the fudge is firm and lifts cleanly from the parchment.
  6. Lift the block out by the parchment overhang and cut into 6 rows by 6 columns for 36 pieces. Store in an airtight container in the fridge for up to 1 week.
