Golden raspberry thumbprint cookies with glossy seedless raspberry jam centers and powdered sugar on a parchment-lined wooden table

Raspberry Thumbprint Cookies Recipe: 30-Minute Christmas Bake

Almond flour gives these thumbprint cookies a tender, buttery crumb, and a spoonful of seedless raspberry jam does all the decorating. Two bowls, 15 minutes of prep and a 13-minute bake — no icing, no long chill.

Ingredients

  • 1 1/2 cups all-purpose flour 190 g
  • 1/2 cup almond flour 48 g
  • 1/2 teaspoon fine salt
  • 3/4 cup unsalted butter softened, 1 1/2 sticks
  • 1/2 cup granulated sugar
  • 1 large egg yolk room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup seedless raspberry jam stirred smooth
  • 2 tablespoons powdered sugar optional, for dusting

Method

  1. Heat the oven to 350°F and line two baking sheets with parchment paper.
  2. Whisk the all-purpose flour, almond flour and salt together in a medium bowl.
  3. Beat the softened butter and granulated sugar with a hand mixer until light and fluffy, about 2 minutes. Beat in the egg yolk and vanilla until smooth.
  4. Add the dry ingredients in two additions and mix on low just until a soft dough forms; stop as soon as no dry streaks remain.
  5. Roll the dough into 1-tablespoon balls and set them 2 inches apart on the sheets. Press a deep well into each with your thumb or the back of a 1/2-teaspoon measure, pressing almost to the bottom.
  6. Spoon about 1/2 teaspoon of raspberry jam into each well; do not overfill or it will bubble over.
  7. Bake one sheet at a time for 12 to 14 minutes, until the edges are set and barely golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.
  8. Dust with powdered sugar once the cookies are completely cool, if using.
