Ingredients

  • 2 cups raw almonds whole, unsalted
  • 1 tbsp olive oil extra-virgin
  • 1 tbsp fresh rosemary finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp fine sea salt plus more to taste
  • 1/4 tsp black pepper freshly ground

Method

  1. Heat the oven to 325 °F. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, toss the almonds with the olive oil, rosemary, garlic powder, salt, and pepper until evenly coated.
  3. Spread the almonds in a single layer on the prepared baking sheet.
  4. Bake for 15 minutes, stirring once at the 8-minute mark, until fragrant and lightly golden.
  5. Cool on the sheet for 10 minutes, so they crisp as they cool, then taste and add a pinch more salt if needed. Store in an airtight container for up to 2 weeks.
