Ingredients

  • 1 large English cucumber about 12 oz; sliced into 24 rounds, 1/2 inch thick
  • 4 oz cream cheese softened or whipped
  • 2 tbsp fresh dill chopped, plus extra for garnish
  • 1 tsp lemon zest finely grated
  • 1 tbsp lemon juice fresh
  • 4 oz cold-smoked salmon cut into 24 small pieces
  • 1 tbsp capers drained
  • 1 tsp everything bagel seasoning
  • 1/4 tsp black pepper freshly ground

Method

  1. Slice the cucumber into 24 rounds, about 1/2 inch thick. Pat both sides dry with paper towels and arrange the rounds on a platter.
  2. Stir the cream cheese, dill, lemon zest, lemon juice and black pepper in a small bowl until smooth.
  3. Spoon the mixture into a zip-top bag, snip off one corner and pipe about 1 teaspoon onto each cucumber round.
  4. Fold each piece of salmon into a loose ribbon and set one on top of each round.
  5. Scatter the capers over the bites, sprinkle with everything bagel seasoning and extra dill. Serve right away, or cover and refrigerate for up to 4 hours.
