Ingredients

  • 4 whole boneless, skinless chicken breasts about 6 oz each, 1 1/2 lb total
  • 5 oz fresh baby spinach about 5 packed cups
  • 4 oz feta cheese crumbled
  • 2 oz cream cheese softened
  • 2 cloves garlic minced
  • 1 tbsp olive oil for rubbing, plus a little for the dish
  • 1 tsp paprika
  • 1/2 tsp kosher salt divided
  • 1/4 tsp black pepper divided

Method

  1. Preheat the oven to 400°F and lightly oil a 9x13-inch baking dish.
  2. Wilt the spinach in a large skillet over medium heat, 2-3 minutes. Let it cool slightly, then squeeze out the excess liquid and roughly chop.
  3. In a bowl, mix the chopped spinach, feta, cream cheese and garlic with a pinch each of salt and pepper.
  4. Pat the chicken dry and cut a deep pocket into the thick side of each breast, stopping before you cut all the way through.
  5. Spoon one quarter of the filling into each pocket; press the opening closed and secure with toothpicks if needed.
  6. Rub the chicken with olive oil and sprinkle with the paprika, remaining salt and pepper; arrange in the baking dish.
  7. Bake 25 minutes, until the center of the filling reaches 165°F. Rest 5 minutes, remove toothpicks, and serve.
