Weeknight Beef and Broccoli Stir-Fry with Garlic Ginger Sauce

A fast, family-friendly stir-fry with tender flank steak, crisp broccoli, and a sweet-savory garlic ginger sauce that comes together in about 30 minutes. Serve it over jasmine rice for an easy weeknight dinner that beats takeout.

Ingredients
  

  • 1 lb flank steak thinly sliced against the grain
  • 5 cups broccoli florets about 2 medium heads
  • 3 tbsp soy sauce or tamari
  • 1 tbsp cornstarch
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 2 tsp toasted sesame oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp vegetable oil divided
  • 0.25 cup water
  • 3 cups cooked jasmine rice for serving

Method
 

  1. In a small bowl, whisk the soy sauce, cornstarch, honey, rice vinegar, sesame oil, and 1/4 cup water until smooth; set the sauce aside.
  2. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high. Add the broccoli and stir-fry 3 to 4 minutes, until bright green and crisp-tender. Transfer to a plate.
  3. Add the remaining 1 tbsp oil, then the garlic and ginger; stir 20 to 30 seconds, until fragrant.
  4. Add the beef in a single layer and cook 2 minutes without stirring, then toss and cook 2 to 3 minutes more, until just browned.
  5. Return the broccoli to the pan, pour in the sauce, and cook 1 to 2 minutes, tossing, until the sauce thickens and coats everything.
  6. Serve immediately over jasmine rice.
