Spinach and Feta Pinwheels: No-Bake Make-Ahead Party Bites

Sliced spinach and feta pinwheels fanned on a white marble platter with dill.

New Year’s Eve arrives with a full guest list, a countdown and no room left in the oven. These spinach and feta pinwheels are the answer: four tortillas, one bowl of filling and a knife, and then the refrigerator does the rest. You can build them tonight and slice them tomorrow, which is exactly the kind of appetizer a holiday table wants.

Why Spinach and Feta Pinwheels Work at a Party

Most hot appetizers ask you to hover by the oven while everyone else is toasting. Pinwheels do the opposite. The filling comes together in a single bowl, cream cheese and Greek yogurt stirred smooth, then feta, chopped spinach, scallions and dill folded through. Nothing cooks. The tortillas get rolled, wrapped and chilled, and the chilling is the only step that asks for patience.

Four 8-inch tortillas turn into 32 bites, so one batch covers a long table. The whole-wheat wraps bring a nutty note against the salty feta and hold their shape once sliced. And because these are served cold, they sit happily on a buffet beside the cheese board without needing a warmer, a plug or a spare hand.

What Goes Into Spinach and Feta Pinwheels, and What Can Change

Plain Greek yogurt is the quiet hero. It loosens the cream cheese so the filling spreads without tearing the tortilla, and its tang keeps every bite from tasting flat. Two percent or whole milk both work well; skim makes the filling thinner, so use a little less.

Feta does the seasoning, so buy a block and crumble it yourself if you can. If all you have is goat cheese, it swaps in directly and gives you a softer, more spreadable filling.

Baby spinach has to be chopped finely. Whole leaves create pockets that make slicing messy. Frozen spinach works too, but thaw it and squeeze it dry first, or the filling will weep into the tortillas overnight. Scallions and fresh dill add the green, oniony lift; dried dill is a fine stand-in at about a third of the amount. Garlic powder and black pepper finish the bowl.

For the wrap, look for 8-inch whole-wheat tortillas. Spinach or sun-dried tomato versions are an easy way to change the look of the platter without touching the filling.

Tips for Tight, Clean-Slicing Pinwheels

Spread the filling to within half an inch of the edge, then stop. Filling that reaches the border squeezes out as you roll and leaves the seam wet and slippery.

Roll tightly, but not so tightly that the tortilla splits. A firm roll gives you round slices instead of flattened ovals.

Chill before you cut. An hour is the minimum and overnight is better, which suits any make-ahead plan: cold filling firms up and the roll holds its shape under the knife. Use a serrated knife and saw gently rather than pressing straight down, and wipe the blade between slices. A clean knife is the difference between neat spirals and smeared ones. Trim the ragged ends first, then cut each roll into eight rounds.

Storing and Serving Spinach and Feta Pinwheels

Wrap each roll in plastic wrap, or stand them in a container with a lid, and refrigerate for up to 24 hours before slicing. Cut them as close to serving as you can, because sliced pinwheels dry out faster than whole rolls.

Once sliced, they keep in a sealed container in the refrigerator for up to two days. Serve them chilled, cut side up on a platter, with dill sprigs scattered over the top and a small dish of olives alongside. For a bigger spread, add spiced nuts and something bubbly.

Spinach and Feta Pinwheels: No-Bake Make-Ahead Party Bites

These no-bake spinach and feta pinwheels wrap a creamy Greek yogurt and feta filling in whole-wheat tortillas, then chill into sliceable party bites. Make them a day ahead for a New Year’s Eve spread or any game-day table.
Prep Time 20 minutes
Total Time 20 minutes
Servings: 32 pinwheels
Course: Appetizer
Cuisine: Mediterranean-inspired

Ingredients

  • 4 oz cream cheese softened
  • 1/3 cup plain Greek yogurt 2% or whole milk
  • 1 cup crumbled feta about 4 oz
  • 2 cups baby spinach finely chopped
  • 2 scallions thinly sliced
  • 1 tbsp fresh dill chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper freshly ground
  • 4 whole-wheat tortillas 8-inch

Method

  1. In a medium bowl, stir the softened cream cheese and Greek yogurt until smooth.
  2. Add the feta, spinach, scallions, dill, garlic powder and black pepper; mix until evenly combined.
  3. Spread one quarter of the filling over each tortilla, leaving a 1/2-inch border at the edges.
  4. Roll each tortilla up tightly, wrap in plastic wrap and refrigerate for at least 1 hour (up to 24 hours).
  5. Trim the ragged ends, then slice each roll into 8 rounds with a serrated knife.
  6. Arrange on a platter and serve chilled; refrigerate leftovers in a sealed container for up to 2 days.

Make a batch on the 30th, slice it on the 31st and spend the party away from the kitchen. If you change the filling, roasted red pepper, sun-dried tomato or a little crumbled bacon all work, I would love to hear how it turned out.
