Mini Crab Cakes Recipe: 30-Minute Baked Party Bites

Twelve golden baked mini crab cakes on a white platter with chives and lemon wedges

New Year’s Eve appetizers have a habit of turning into a hot-oil operation right when you would rather be pouring something cold. These mini crab cakes take the other road: one bowl, one sheet pan, and about 30 minutes from a cold oven to a full platter. Baking at 400°F gives them golden edges and a tender center, and the lump crab does the rest of the talking. Make a double batch, because twelve little cakes disappear faster than the confetti.

Why Baked Mini Crab Cakes Work for a Party

Fried crab cakes are wonderful and also a production: oil to heat, splatter to wipe, and a cook stuck at the stove while the party happens in the next room. Baked mini crab cakes skip all of it. The oven does the work while you set out plates, open a bottle, and hunt down the good napkins. Because each cake is only about 1/4 cup of mixture and half an inch thick, they bake in 12 to 15 minutes, long enough to brown at the edges and short enough that the crab inside stays sweet and juicy. One pound of crabmeat makes twelve, which is a respectable platter for a small gathering and a very good reason to double the recipe for a bigger one.

The texture is the real argument. Panko keeps the crumb light instead of bready, and the mayonnaise and egg hold everything together without turning the cakes dense. Paprika, Dijon, and lemon juice give a warm, bright edge that has you reaching for a second one before you have finished the first.

Lump Crab and the Ingredients That Carry It

The crab is the whole point, so buy lump crabmeat rather than the shredded stuff, and drain it well. Pick through it once with your fingers for stray shells. It takes two minutes and saves a guest an unpleasant surprise.

Everything around the crab is there to support it. Panko breadcrumbs stay crisp and light; regular dry breadcrumbs work in the same amount if that is what you keep, though the cakes come out a little finer in texture. Mayonnaise adds richness and moisture, Dijon and fresh lemon juice bring the brightness, chives add a mild onion note, and paprika and salt round it all out. No chives on hand? Thinly sliced scallion greens are the closest stand-in, and a little extra lemon juice on the plate covers for almost anything.

Tips for Mini Crab Cakes That Hold Together

  • Drain the crab well and pat it dry. Extra moisture is the main reason a crab cake falls apart.
  • Stir the panko, egg, mayonnaise, Dijon, lemon juice, chives, paprika, and salt together first, then fold in the crab. Mixing it all at once works the crab too hard and breaks up the lumps.
  • Use a 1/4 cup scoop so every cake is the same size, then flatten each one to about 1/2 inch so they bake evenly.
  • Brush the tops with olive oil, not just the parchment. That thin coat is what gives the baked surface its golden color.
  • Start checking at 12 minutes. Pull the pan when the edges are golden and the centers feel set to the touch.

Storing and Serving Your Mini Crab Cakes

Serve them warm, straight off the sheet, with lemon wedges on the side. They are excellent on their own and even better with something cool alongside, whether that is lemon aioli, tartar sauce, or plain Greek yogurt with a little lemon zest stirred in.

To get ahead, shape the patties earlier in the day, cover the sheet, and refrigerate them. Add a minute or two to the bake time since they go into the oven cold. Leftovers keep in the refrigerator in a covered container for up to two days. Reheat them on a sheet pan in a 350°F oven until warmed through, which brings back the crisp edge far better than a microwave does.

Mini Crab Cakes Recipe: 30-Minute Baked Party Bites

Baked mini crab cakes with golden edges and a bright lift from lemon and Dijon. They come together in about 30 minutes and are built for a New Year’s Eve party platter.
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes
Servings: 12 mini crab cakes
Course: Appetizer
Cuisine: American

Ingredients

  • 1 lb lump crabmeat drained and picked over for shells
  • 1/2 cup panko breadcrumbs
  • 1 large egg beaten
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice plus lemon wedges for serving
  • 2 tbsp fresh chives finely chopped
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 2 tbsp olive oil for brushing the baking sheet

Method

  1. Heat the oven to 400°F. Line a rimmed baking sheet with parchment paper and brush it with 1 tbsp of the olive oil.
  2. In a large bowl, stir together the panko, egg, mayonnaise, Dijon, lemon juice, chives, paprika and salt until evenly combined.
  3. Add the crab and fold gently with a spatula until just mixed, keeping the lumps intact.
  4. Scoop about 1/4 cup of the mixture for each cake and shape into 12 patties about 1/2 inch thick. Set them on the prepared sheet.
  5. Brush the tops with the remaining 1 tbsp olive oil. Bake for 12-15 minutes, until golden at the edges and set in the center.
  6. Serve warm with lemon wedges.

Set the platter down, step back, and watch it empty. Twelve mini crab cakes, one sheet pan, and a New Year’s Eve that stays out of the kitchen is the kind of appetizer worth repeating. Keep the chives and lemon close when you serve them; a little extra brightness on top has never hurt a crab cake.
