Chicken ramen stir-fry is the kind of weeknight dinner that looks like a lot of chopping but comes together in one hot wok. Three blocks of ramen are cooked just until tender, shocked in cold water, and tossed with oil so the noodles stay separate instead of turning into a starchy clump. Around them goes a colorful mix of green and red bell peppers, matchstick carrots, and broccoli, plus bite-sized chicken thighs coated in black pepper, kosher salt, cornstarch, and soy sauce. The result is a glossy, savory pile of noodles and vegetables with enough sauce to coat every strand.
Why this ramen stir-fry works
The appeal is texture and timing. The carrots go in first because they take the longest to soften, while the broccoli and peppers need only a few minutes. Garlic follows the carrots and blooms in the oil, and the chicken is added only after the vegetables have been pushed to the side, so each component cooks at its own pace. Boneless, skinless chicken thighs are the preferred cut because dark meat is flavorful and forgiving; the pieces are cut to an even size so they finish cooking together. The noodles are already cooked and cooled, so the final toss is just a matter of heating them through and coating them in the sauce.
There is also a practical rhythm to the method: prep the vegetables, boil and drain the noodles, marinate the chicken, then stir-fry in stages. Once the ingredients are lined up, the cooking goes quickly, and the wok does most of the work.
Ingredients and easy swaps
The core ingredients are ordinary supermarket finds: ramen noodles, green and red bell peppers, carrots, broccoli, chicken thighs, garlic, onion, white mushrooms, olive oil, sesame oil, black pepper, kosher salt, cornstarch, and soy sauce. A finishing sauce goes in at the end and pulls everything together.
Chicken breast can replace the thighs, though it should be cooked to 165°F and watched closely so it does not dry out. The recipe also works with beef or ground meat. Keep the carrot matchsticks because they soften more slowly than the peppers and broccoli, and add more oil during cooking if the wok looks dry. Sesame oil can stand in for some of the olive oil. The ramen seasoning packets are discarded, so the flavor comes from the marinade, aromatics, and final sauce rather than the packet.
Tips for the best texture
Do not overcook the noodles. They need only about two minutes in boiling water, and they should be drained and plunged into cold water immediately to stop the cooking. A small amount of olive oil tossed through the drained noodles keeps them from sticking together while the rest of the dish is prepared.
Cut the chicken into even, bite-sized pieces so they cook at the same rate. The marinade should coat every piece and turn slightly tacky from the cornstarch and soy sauce. When stir-frying, keep the vegetables moving, add garlic after the carrots have had a head start, and add the broccoli last so it keeps some bite. If the pan seems dry, add a splash of oil rather than water. Check the chicken with a thermometer before mixing in the mushrooms and onion and finishing with the sauce and noodles.
Keep the noodles a little saucy—the final toss should coat every strand, not leave a pool at the bottom of the wok.
Storing and reheating
Cool leftovers quickly and store them in a covered container in the refrigerator. Ramen noodles absorb liquid as they sit, so reheat gently in a skillet or wok with a splash of water or extra sauce to loosen them. Stir frequently until hot throughout. For the best texture, reheat only what you plan to eat and keep the rest chilled. The chicken and vegetables can be cooked ahead, but keep the noodles separate until serving if possible.

Chicken Ramen Stir-Fry with Peppers, Carrots and Broccoli
Ingredients
Method
- Bring 6 cups of water to a boil and cook the three ramen blocks for about 2 minutes, following the package timing and discarding the seasoning packets.
- Drain the noodles and shock them in cold water to stop the cooking, then toss with a little olive oil to keep them from sticking.
- Chop the green and red bell peppers, cut the carrots into matchsticks, and cut the broccoli into florets.
- Cut the chicken thighs into even, bite-sized pieces.
- Toss the chicken with black pepper, kosher salt, cornstarch, and soy sauce until every piece is coated, then let it marinate briefly.
- Heat olive oil in a wok over medium-high heat. Add the carrots first and stir-fry until they begin to soften.
- Add the garlic, then the green and red bell peppers, keeping everything moving. Add the broccoli and cook until it reaches the texture you like, adding more oil if the wok looks dry.
- Push the vegetables to the side, add the chicken, and cook, stirring, until it is cooked through and the thickest pieces register at least 165°F; the cook prefers thighs at 170–172°F.
- Add the onion and white mushrooms and stir everything together, letting the mushrooms cook down.
- Pour in the finishing sauce and mix well.
- Add the ramen noodles and toss until coated and heated through, then turn off the heat.
- Serve hot, with extra sauce if desired.
